Aubergines are also known as ‘eggplants’. The latter name is inspired by the appearance of their wild counterparts, which are the size and colour of a chicken egg. Aubergine is a fruiting vegetable from the nightshade family, just like tomatoes and sweet peppers. Aubergine works really well with a host of spices and other flavours. This is because it has a neutral flavour and a spongy flesh that absorbs lots of different flavours.
